Pizzeria has three finalists at expo

Pompeii Pizzeria in Elk River had three employees compete at the 2017 International Pizza Expo in Las Vegas in March.

Augie St. Dennis entered a two-ingredient red sauce pizza made with capicola cured meat, a variety of fresh mushrooms, fresh mozzarella and Parmesan cheese.

All three were finalists in their categories.

Alec Henrickson, general manager, was competing for the fifth time in the non-traditional pizza category. He entered a pizza created in honor of the late musician Prince.

The Prince is a white sauce pizza created in honor of the musician. It is made with creme fraiche, feta, fresh mozzarella and Parmesan cheeses, plums, mandarin oranges, prosciutto ham, honey, lemon zest and onions.

Brianna Sundeen competed for the first time in the crust-stretching category and Augie St. Dennis competed for the first time in the traditional two-topping pizza category. St. Dennis entered a red sauce pizza.

The Neapolitan pizzeria opened in 2010 and is located at 315 Jackson Ave. It is owned by Frank and Jody Galli, of Elk River.
