Chili contest heats up giving

Sherburne County Government Center’s first-ever chili cook-off brought in eight contestants and $190 for Sherburne County Area United Way.

“Congratulations to all of our great cooks!” said Marcia Engvall, one of the organizers of the fundraiser. “It was a very close competition, as we have some pretty fabulous cooks here at the Government Center.”

Jen Callahan, the emergency services director for Sherburne, took first place. Chris Lawver, a probation officer in the sheriff’s department, and MaryJo Cobb, a supervisor in the Health and Human Service Department, took second and third, respectively.

The folks at the government center raised another $90 with a special dress-up day.
County employees have been encouraged to consider payroll deduction for United Way giving.
Below are the recipes:

Jen Callahan’s Chili
(First-place winner)
2 lbs. ground beef
2 cloves minced garlic
1/2 chopped onion
1 tsp. black pepper
3 cups tomato sauce
8 oz. jar salsa
4 tbsp. chili seasoning
1 can drained light kidney beans
1 can drained dark kidney beans
1 can diced tomatoes and green chilies
Brown hamburger with onions and garlic. (Remove excess grease from hamburger.)
Add remaining ingredients and simmer for one hour.

Chris Lawver’s Chili
(Second-place winner)
1 lb. stew meat, cut into bite-size pieces and brown in oil
1 lb. hamburger, brown and drain
In large kettle add:
1 can kidney beans-undrained
1 can pinto beans-undrained
1 can black beans-undrained
2 cans of stewed tomatoes, undrained
2 cans of diced tomatoes, undrained
2 cups frozen corn
2 large onions, chopped
2 green peppers, chopped
1 tbsp. cumin
2 tsp. oregano
1 tbsp. paprika
3-4 tbsp. chili powder
5 cloves garlic, crushed
1 bay leaf
1/4 tsp. Liquid Smoke
1/4 tsp. each of:
white pepper
black pepper
cayenne pepper
chipotle pepper
salt to taste
Add water to desired consistency
Bring to boil. Simmer on low for one to two hours.

Mary Jo Cobb’s Chili
(Third-place winner)
2 pounds ground beef, browned
1 1/2 cup chopped onion
1 cup chopped green pepper
2 garlic cloves, minced
28 ounces tomato pieces
2 16-ounce cans kidney beans
2 tsp. salt
2 tsp. chili powder
1 tsp. pepper
1 tsp. cumin
Put all ingredients in a crock pot and cook all day on low.
